Very quick shipping, well packaged and cut perfectly. I only buy steaks from here. I reverse seared this 5cm monster and here’s how I did it.
Defrost slowly overnight and remove excess moisture. While waiting for it to reach room temp salt it liberally.
Remove moisture again and then rub olive oil all over it. Preheat your oven to 180C and cook with a thermometer probe until around 40C. Transfer to a hot cast iron skillet and sear in high quality French butter (or Ghee butter) with rosemary, thyme and garlic until 45-50C. Rest 5-10 mins. Cut. Serve with whole grain mustard, fleur de sel, and wasabi.
As a side dish slice up mushrooms thinly and sprinkle salt and fresh thyme on it. Heat up a spoon of French butter, a few drops of lemon juice, and lots of olive oil. Deep fry mushrooms in the oil and you will get a super rich mushroom dish. Pairs well with Chardonnay.
As an appetizer, cut up burrata cheese. Add tomatoes and slices of jamon iberico. Drizzle high quality olive oil, and balsamic glaze. Optionally finely grate grana padano cheese on top for even more flavor.
